    Happy Birthday Ice Cream Cake

    What You Need

    ½ cup margarine

    ½ cup confectioners' sugar

    ½ cup self-rising flour

    2 eggs

    1 tablespoon milk

    1 teaspoon vanilla extract

    1 quart ice cream

    mixing bowl

    glass

    fork or electric mixer

    loaf pan

    knife

    plate

    spatula

    What You Do

    1. Remove margarine from refrigerator and let soften for 10-15 minutes.

    2. Place margarine, sugar, and flour in mixing bowl.

    3. Crack each egg into glass and check for blood spots. Then add to mixing bowl.

    4. Add milk and vanilla extract. Beat mixture with fork or electric mixer until soft and well-mixed. (If you've never used a mixer before, ask an adult to show you how.)

    5. Turn oven on to 350°. Grease loaf pan lightly by spreading a very thin coat of oil on it or by spraying it with baking spray. Then sift a light coating of flour into it.

    6. Pour mixture into pan. Place pan in oven. Bake for 35 minutes.

    7. Turn off oven. Using oven mitts, remove pan from oven and place on potholder. When cool, carefully cut around the edges of the cake with a knife, then turn the pan over onto a plate. Cake should tumble out.

    8. Right before serving cake, remove ice cream from freezer. With a sharp knife, cut into three long slices (or many small slices, depending on the shape of your ice cream container).

    9. Cut the cake into three long slices as well.

    10. Using a spatula, alternate layers of cake and ice cream, ending with ice cream on top.

    What You Get

1 terrific ice-cream cake, guaranteed to liven up any birthday party!
